CLIMATE
It varies depending on the production area. In the northern area summers are short and temperatures are high, rainfall is around 500 mm; in the Axarquia area, protected from the north winds by the mountain ranges and oriented to the midday, the climate is more temperate due to the influence of the Mediterranean; while in the west the climate can be defined as dry sub-humid.
SOILS
They evolve from the red Mediterranean soils with limestone components of the northern zone to the decomposed and steeply sloping slates of the Axarquia.

GENERAL CHARACTERISTICS OF THE WINES
TRADITIONAL WINES
Their personality is marked by the "arrope", concentrated must or must dehydrated by heat, which caramelizes the wine and gives it its dark color, sweetness and characteristic pastiness. We can distinguish between "Malaga", a sweet wine made from the first must of the grape; Pedro Ximénez and Muscatel, both made from grapes of the same name.
MODERN WINES
Made from native and foreign varieties, they are marked by the warmth of the climate, especially in the case of the reds, very sunny and in some cases with "burnt" notes. The varietal florality of the muscatel and the singularity of the pinot noir stand out against the freshness and richness of the balsamic traits of the petit verdot. The new natural sweet whites offer pleasant musky and auvados aromas, and a very fresh and sweet mouth at the same time.
TYPOLOGY OF CLASSIC WINES:
(a) Liqueur wines: from 15 to 22% vol.
b) Naturally sweet wines: 15 to 22% vol., obtained from muscatel or pedro ximénez varieties, with musts containing a minimum of 244 grams/liter of sugar.
c) Naturally sweet wines (with the same varieties, over 13% vol. and from musts of 300 grams/liter of sugar) and still wines (from 10 to 15% vol.).
